Yum Won Sen is one of Thailand's great salads — light yet deeply satisfying, with a dressing that is sharp, salty, and just enough heat to keep things interesting. Glass noodles absorb the tangy lime and fish sauce dressing beautifully, while prawns, minced pork, and fresh vegetables add texture and substance. It is the kind of dish that feels refreshing and filling at the same time — a balance that Thai cuisine does better than almost anyone.

Ingredients

  • 100 grams glass noodles (dried)

  • 150 grams prawns, peeled and deveined

  • 150 grams minced pork

  • 2 tablespoons fish sauce (or ONOFF Spices No Fish Vegan Seasoning Sauce for a vegan version)

  • 3 tablespoons fresh lime juice

  • 1 teaspoon palm sugar (or coconut sugar as a substitute)

  • 2 –3 bird's eye chillies, finely sliced

  • 3 shallots, thinly sliced

  • 2 spring onions, sliced

  • 2 stalks celery with leaves, sliced

  • 1 medium tomato, cut into wedges

  • small handful of fresh coriander leaves

  • 1 tablespoon roasted peanuts, roughly chopped

Directions

  • Soak the glass noodles in cold water for 10 minutes until softened, then drain and cut into manageable lengths with scissors.
  • Bring a small pot of water to the boil. Briefly blanch the prawns until just pink, then remove. In the same water, cook the minced pork, breaking it up as it cooks, then drain. Set both aside to cool slightly.
  • In a large bowl, whisk together the fish sauce, lime juice, and palm sugar until the sugar dissolves.
  • Add the drained glass noodles, prawns, and minced pork to the bowl and toss to coat in the dressing.
  • Add the shallots, spring onions, celery, tomato, and chillies and toss everything together well.
  • Transfer to a serving plate and top with fresh coriander leaves and roasted peanuts.
  • Serve immediately at room temperature.

Notes

  • Yum Won Sen is highly adaptable — the minced pork can be swapped for minced chicken, and the prawns can be omitted entirely for a lighter version. For a fully vegan dish, replace both proteins with firm tofu and use ONOFF Spices No Fish Vegan Seasoning Sauce in place of fish sauce.
