VEGETARIAN SOUP WITH VEGETABLES AND SOBA NOODLES
Soba noodles are firm thin Japanese noodles made from buckwheat and wheat. They have a bit of a nutty flavour and are sold at the supermarket.

Ingredients:
- 100 grams soba noodles (you can use more noodles if you like and if you really eat the soup as a meal).
- 500 ml of water and a miso paste, or choose a ready-made organic broth.
- half a box of mushrooms
- a handful of bean sprouts
- 100 grams of broccoli
- a small carrot, cut into strips
- a red pepper, sliced into strips
- spring onion
- ginger, in small strips
- a clove of garlic, in small strips
- some coriander leaves
- a few mint leaves
- tablespoon ONOFF SPICES THAI SWEET SOY SAUCE
- 2 teaspoons ONOFF SPICES SAMBAL OELEK
Preparation:
Kook de noedels volgens de instructie op de verpakking. Breng de bouillon met de gember, de knoflook, de sambal en de sojasaus aan de kook. Voeg daarna de groente toe. Laat de groente niet te zacht worden. Doe de noedels in een kom en giet de bouillon met groente eroverheen. Afmaken met wat koriander en een blaadje munt voor de Aziatische smaak.
